The Assistant Chief Steward supports the Chief Steward in managing the daily operations of the Stewarding Department, ensuring the highest standards of cleanliness, sanitation, and hygiene across all food and beverage outlets, kitchens, and back-of-house areas. This role supervises stewarding colleagues, oversees the maintenance of kitchen equipment and operating supplies, and ensures compliance with food safety regulations and luxury hospitality standards. The Assistant Chief Steward plays a key role in maintaining an efficient, safe, and organized working environment that supports exceptional culinary operations.

Key Responsibilities
Assist the Chief Steward in planning, organizing, and supervising the daily stewarding operations.
Supervise and lead the stewarding team, ensuring tasks are completed efficiently and in accordance with hotel standards.
Ensure the proper cleaning, sanitization, and storage of all kitchen equipment, utensils, crockery, cutlery, glassware, and kitchen facilities.
Maintain cleanliness and hygiene in all kitchens, food preparation areas, storage rooms, receiving areas, and back-of-house facilities.
Monitor dishwashing operations to ensure adequate supplies are available during service periods.
Conduct regular inspections to ensure compliance with food safety, hygiene, sanitation, and health & safety standards.
Coordinate waste management, recycling, and disposal procedures in accordance with hotel policies and environmental standards.
Assist in maintaining stewarding equipment, including dishwashers, cleaning machines, and waste disposal systems, and report maintenance issues promptly.
Monitor inventory levels of cleaning chemicals, operating supplies, and stewarding equipment, ensuring timely replenishment.
Support the Chief Steward in preparing staff schedules, assigning daily duties, and monitoring attendance.
Train, coach, and mentor stewarding colleagues on cleaning procedures, safety practices, and operational standards.
Ensure proper handling, storage, and usage of cleaning chemicals in accordance with safety regulations.
Assist during banquet operations, large events, and peak service periods to ensure seamless support for Food & Beverage operations.
Participate in departmental meetings, training sessions, and continuous improvement initiatives.
Perform any other duties assigned by the Chief Steward or Executive Chef.
Qualifications & Requirements
Diploma or Bachelor's degree in Hospitality Management, Hotel Management, or a related field is preferred.
Minimum of 3 years of experience in Stewarding operations, including at least 1 year in a supervisory role within a luxury hotel, resort, or large-scale hospitality operation.
Strong knowledge of stewarding operations, sanitation practices, and kitchen hygiene standards.
Good understanding of HACCP, food safety regulations, and occupational health & safety requirements.
Experience managing stewarding equipment, inventories, and chemical handling procedures.
Strong leadership, communication, and organizational skills.
Ability to supervise and motivate a multicultural team in a fast-paced environment.
Physically fit and capable of working in demanding operational conditions.
Good command of English; Arabic language skills are an advantage.
Flexibility to work shifts, weekends, evenings, and public holidays.
