Assistant Chief Steward

An Assistant Chief Steward in a hotel ensures the immaculate cleanliness of kitchen and dining areas while strictly enforcing health and safety standards. They supervise stewarding staff, coordinate daily dish-washing, manage equipment inventories, and support the Executive Chef in executing smooth back-of-house operations.
Key Responsibilities
Team Leadership: Supervise, train, and schedule the stewarding team. Foster a collaborative, multicultural work environment.
Hygiene & Sanitation: Enforce strict compliance with local health regulations. Ensure proper chemical levels, water temperatures, and cleaning protocols are consistently maintained and documented.
Equipment Management: Coordinate dish and pot-washing, manage operating supplies, and track equipment breakages.
Back of House Operations: Ensure all back-of-house areas, trash compactors, and wash stations are spotless. Assist the culinary team with banquet plate-ups and buffet setups.
Safety Compliance: Oversee the safe handling of hazardous cleaning substances and ensure the correct use of Personal Protective Equipment (PPE).
Requirements:
Open to all nationalities.
Strong English communication skills are required; proficiency in additional languages will be considered an advantage.
Professional, polished, and well-groomed appearance in accordance with luxury hospitality standards.
Previous experience in luxury hotels, high-end hospitality environments, or hotel Food & Beverage/Stewarding operations is preferred, with 2–5 years of relevant experience. For supervisory positions, at least 1–2 years of supervisory experience is required.
Strong knowledge of kitchen hygiene, sanitation regulations, food safety standards, safe food-handling practices, and commercial cleaning equipment.
Excellent customer service, communication, interpersonal, and relationship-building skills, with a genuine passion for delivering exceptional guest experiences.
Strong leadership, teamwork, and cross-functional collaboration skills, with the ability to work effectively in a fast-paced environment.
Demonstrated problem-solving abilities and the confidence to handle guest requests, concerns, and operational challenges professionally.
Ability to follow instructions, policies, procedures, and brand standards accurately and consistently.
Physically fit and capable of standing for extended periods, lifting materials, and performing repetitive tasks as required.
Flexible, adaptable, and willing to work shifts, weekends, public holidays, and varying schedules based on operational requirements.
